Well you are talking about microsoft so you should expect it to
be ****e. In my opinion you should be able to grab text from words
without the embeded control characters, its probably not
so dificult to do, easy infact but then microsoft wants to kill off
other formats tp increase its monopoly.
If there a text selection tool like in Adobe Acrobat?

Most applications, even M$ ones either put plain ASCII text into the clipboard,
or with something like word, put a text version & a native version in it. So
either:

The app is not generating a text only version
It is generating a "native" version, but calling it text.

Or

There are both versions available and the pasting app is using "native".

Given that M$ assume (or intends that) the World uses Word and IE then the
latter is likely.

In the old days this may have been true, but nowadays they put UTF-8
encoded Unicode. I know this to be true since I have just had to fix a
webapp to automatically translate some of the more common Unicode
characters coming out of Word. For day to day use US english users will
not notice the difference, but as Bill is encountering anyone else
(Greeks using omega, British using pounds, Word users using
smartquotes) tend to get shafted.
