Default HDMI to DVI for DVD

I have a 52" Hitachi rear projection set in addition to my newer 42"
Toshiba LCD. This set is from the last year before they went to HDMI
and has a DVI connection. I know you can use a HDMI to DVI cable to
hook up to the TV but I was wondering if the upscaling DVD players or,
even, Blueray would work with this configuration.

Don't forget to run your audio separately. DVI doesn't carry audio
like HDMI does.

Correct, indeed. However, I figured that the OP had been using DVI
and was aware of this.
