I've just looked at which HDTV channels are available on cable,
and it just says that there's the BBC HD channel and that's it:

Is this correct, or are they missing some off?

That is correct just the BBC channel, with the odd VOD content here
and there.

Did Sky pull their HD channels when they fell out, or has there
only ever been one HDTV channel on cable?

pretty sure there was some ITV content too - someone mentioned
watching space 1999.

ITV have HD channels? Do they output anything worth watching in SD,
let alone HD?

They just had a few test programmes.

Anything in particular? I bet it's nothing I'd care to see even in black and
white, never mind HD.

There was a discussion/feedback program broad broadcast which was made
unwatchable due to the hi-res floppy fringe in one segment.

Watching it in hi-def was like watching Patrick Moore have colonic
irrigation.

(sorry - couldn't resist)
