Or did I just miss it before?

Holding down the play button puts unit in slo-mo after a few seconds.

u missed it
but I guess you already know holding down FF or RW goes to the next
bookmark or end/start of the recording?

Not in my manual. Specifically read through it looking for the feature. In
fact, I have seen threads here putting that feature, along with the ability
to 'frame step' on the wish list. Somebody please tell me there's a way to
do that as well.

The skip to start, skip to end, I did know about (Also not in the manual,
but found it by accident.)

I have a Pace, I don't know about the Amstrad.

In case you are looking for bookmarks, it's press Pause then Red. To
access them either use the long press on RW or FF as mentioned or press
Pause then Green, or at the start screen press the horizontal arrows.
